If Your Potatoes Turn Green, Don’t Ignore It… There’s an Important Reason Why.

Green patches on potatoes are more than just a change in color—they’re a sign that the potato has been exposed to light.

When this happens, the potato produces chlorophyll, the green pigment found in plants. Although chlorophyll itself is harmless, its presence can indicate increased levels of **solanine**, a naturally occurring compound the potato produces as a defense mechanism.

In large amounts, solanine can give potatoes a bitter taste and may cause symptoms such as nausea, vomiting, stomach cramps, and diarrhea. Young children are especially sensitive because of their smaller body size.

The good news is that a small green area doesn’t always mean the entire potato needs to be thrown away. If the discoloration is limited, you can generously cut away the green portion along with any sprouts before cooking the rest.

However, if a potato is heavily green, has extensive sprouting, feels damaged, or tastes bitter, it’s safest to discard it.

It’s also important to know that cooking methods such as boiling, baking, or frying do **not** reliably remove solanine, so checking potatoes before preparing them is essential.

To reduce the chance of potatoes turning green, store them in a cool, dark, and dry place away from direct light. Avoid leaving them in clear packaging or on bright countertops, and inspect them before and after peeling.

By paying attention to these simple signs, you can help keep your meals safe while reducing unnecessary food waste.
